Do you own in the winter more to the team Soulfood and eat casseroles and hearty dishes or may it be a crispy salad? Personally, I also like to eat salads in winter, but then I like to combine them with warm ingredients like chicken breast fillet, chickpeas or fried bacon. But also baked sweet potatoes in the salad just taste delicious! Today I brought you a delicious corn salad with sweet potatoes , blueberries and creamy honey mustard dressing.

sweet potatoes and Blueberries - why have not I come to this fabulously delicious combination before? ♡ Both together taste heavenly! That's why I served the two vitamin bombs today with crunchy lamb's lettuce and spicy feta. On top of that comes a quick honey-mustard dressing that just goes perfectly with lamb's lettuce. There are salads that I could eat over and over. And this one is definitely one of them!

Walnuts also go great with lamb's lettuce, so grab a few on the plate:)

Step by step to corn salad with sweet potatoes

For the fast winter lamb's lettuce al s First sweet potato cube baked in the oven. In the meantime you can prepare all the ingredients for the salad and there is not much you can do.

Wash the lamb's lettuce and blueberries, crumble the feta and stir the deliciously creamy yoghurt, vegetable stock, honey and mustard dressing on.The fruity-spicy dressing just goes with most salads and I always have the ingredients in house.

I usually make my honey-mustard dressing with 2 tbsp olive oil, 1 tsp honey and 1 tsp mustard. Today there is a variant without oil, but with 2 tablespoons natural yoghurt and 2 tablespoons vegetable broth.Put on a sheet of baking paper, mix with olive oil and season with salt and pepper. Bake in the oven for 20 minutes, turn in between.

  • From olive oil, yogurt, honey, mustard, Mix salt and pepper with a dressing.

  • Corn salad, Arrange sweet potatoes, blueberries and feta on 2 plates and drizzle with the dressing. If you want, you can add some chopped walnuts over the salad.
